Nothing beats a steaming bowl of chicken soup on a chilly day, especially when it’s made from scratch! My chicken soup recipe has been a family favorite for years, and it's always a hit whenever I make it. It’s rich, hearty, and so incredibly flavorful that you’ll be wanting seconds (or thirds!). Here’s how you can whip it up.
Ingredients You’ll Need
- 6 carrots, peeled and sliced thin. 4 sticks of celery, diced small. 1 large onion, diced small. 1 envelope of Lipton chicken noodle soup mix, 1 box of chicken broth, 4 cups of water, 2 cans of cream of chicken soup, 4 cups of cooked, diced rotisserie chicken.
To make the Noodles: 2 eggs, dash of salt, 1/8 tea baking powder, 2 cups of flour (more or less)
Instructions to Cook Up Some Magic
In a large stock pot, add all the diced veggies, chicken broth, water, soup mix, and cream of chicken soup. Stir well. Bring to a boil, then turn to low. Cover and simmer about 30 minutes or until the vegetables are soft. WHILE THAT IS COOKING: Beat 2 eggs with about 1 TB of water. Add the dash of salt and baking powder. Then add flour a little at a time to make a dough that can be rolled out. It will be slightly sticky but should be able to roll. Roll this dough thin. Then cut into thin strips about 1.5 inches long. (I like to use a pizza wheel or pasta wheel for this. Let this dough sit on the counter to dry while the soup is cooking. When soup is done, bring it back to a boil and put in the dough noodles. They will still be kind of wet, but that's ok. Boil and stir for 5 minutes. Turn heat down. Add the chicken and warm through. Salt and pepper to taste. (As with most soups, it tastes even better the next day)

Ingredients for Bread Rolls
- 3 1/4 cups bread flour, 1/4 cup granulated sugar, 1.5 tea salt, 3 TB dry powdered milk, 3 TB butter, softened, 10 1/2 fluid ounces of water, warm, 1 1/2 tea dry yeast. Melted butter for brushing on top, optional but recommended.
Baking Instructions
1. I only know how to make this using a bread machine with a dough cycle. Put flour, sugar, salt, powdered milk, butter and water in bread machine. Put the yeast in the yeast dispenser. Put it on the dough cycle. Let it rise a little in the machine then turn it out onto a counter and punch down. Divide into 18 equal portions. Roll into balls and put inside of greased muffin tins or on a cookie sheet. Cover with a towel and let rise for 20 minutes or til doubled. Bake at 350 degrees F for 10-15 minutes. Brush tops with melted butter when they come out of the oven.
